some quick notes to personalize Outlook client files as you want:
- Create below key to have your .PST files located in a folder you wish (note, you can’t do this via Outlook GUI Options)

- Use OST to PST converter tool if your excg server is inaccessible. Tool I tested is “Advanced Exchange Recovery(AEXR)“
